Collapse MediaSFU's four recording booleans into one status.
The SDK tracks recordStarted, recordPaused, recordResumed and
recordStopped independently, and they overlap — after a pause/resume cycle
recordStarted and recordResumed are both true. Deriving "is it recording?"
from any single flag gives the wrong answer at least once per session.
